Side Dishes!

  1. Mac and Cheese

    * 1 lb macaroni
    * 8 oz cream cheese
    * 2 cups shredded cheddar
    * 1 cup milk or cream
    * ½ cup bread crumbs
    * ½ cup grated parmesan cheese
    * 1/8 tsp cayenne pepper
    * 1 tbls butter

    Preheat oven to 350 F.

    Lightly butter 2 or 3 quart baking dish or pan (I use a long rectangular one..more crust!) Meanwhile, in a large pot of salted
    water cook the noodles until al dente, barely cooked, about 8 minutes.
    Drain and return to the empty pot. Mix with cream cheese until it is
    melted and getting nice and gooey. Stir in the cheddar and milk or
    cream. Transfer to the buttered baking dish (or pan, like I use) In a
    small bowl combine the breadcrumbs, parmesan and cayenne. Sprinkle
    over the macaroni and dot woth the butter. Bake until golden brown and
    bubbly, about 40 minutes!
    I add ham cubes or chicken and veggies and then its a meal in a dish!

    **I should add I dont bake the mac and cheese.I just mix it in a big pot**

  3. Corn and Black bean salad

    1 can 14 oz. black beans (drained and rinsed)
    1 1/2 to 2 cups of corn ( I use fresh corn on the cob, cook and cut off the cob when cooled..approx. 3 ears)
    1/2 to 1 diced red pepper
    1 finely diced jalapeno
    1/2 red onion diced
    1/2 cup or so of chopped parsley
    1/2 cup or so of chopped cilantro

    Sauce:
    Juice of 1 lime
    1 1/2 tsp. cumin
    2 Tbs. of Veg. oil
    a few shots of tobasco...I use Franks hot sauce

    Mix everything together and refrigerate...give a stir before serving to re-distribute sauce.
